Hand harvested in small trays of 20 kg in order not to damage the grapes. Double-selection of bunches and grains.
Cold maceration during 5 days at 10°C (50°F). Selected yeasts. Daily punch-downs and delestages in small concrete eggs. Extended maceration for 30 days at 28°C (82°F). Malolactic fermentation in barrels.
100% of the wine was aged for 12 months in French oak barrels and concrete eggs.
The cold climate and the calcareous soils make the
grapes ripen in a unique way, which results in a vibrant, mineral and complex wine. It is deep wine, full of aromas of wild black fruits and polished tannins in the mouth.

Hand harvested in small trays of 20 kg in order not to damage the grapes. Double selection is performed: first selection of bunches and a second selection grape by grape.
Bunch selection. Fermented in open top small concrete tanks with 20% whole clusters and at a temperature ranging from 24 to 26°C (75 to 80°F).
100% of the wine was aged for 12 months in French oak barrels and concrete eggs.
It stands out for its light ruby red colour and its aromas of cherries and mountain herbs. On the palate, it is elegant, with fine tannins and a delicate balance and a great length.

Hand-harvested on July 1st after 4 snowfalls that created ideal conditions for sugar concentration in the grapes.

Whole clusters. Crushing and pneumatic pressing before cold decantation. Selected yeasts. 100% of the must fermented in French oak barrels.
Aged French oak barrels for 12 months.
Bright golden yellow colour. Complex, fine and elegant on the nose, with aromas of citrus peel, honey and a subtle toast. On the palate it is unctuous, fruity with a great length.
