Harvest
The end of March. Hand harvested in small trays of 20 kg in order not to damage the grapes. Grape sorting is performed before de-stemming and cold pressing.​

Fermentation
Cold decanted during 24 hours before racking. 34% of the must was fermented in barrel and 66% in stainless steel tanks.​
Ageing
6 months in French oak barrels and stainless steel tanks.​
Tasting Notes
This unique Torrontés displays the perfect unity of the place of origin with modern winemaking techniques. It is fruity and complex at the same time. The character of the high elevation grapes is reflected in a refreshing acidity combined with the creamy and delicate after taste given by the French oak barrels.​

Gran Calcareo Malbec

Harvest

Hand harvested in small trays of 20 kg in order not to damage the grapes. Double-selection of bunches and grains.

Fermentation

Cold maceration during 5 days at 10°C (50°F). Selected yeasts. Daily punch-downs and delestages in small concrete eggs. Extended maceration for 30 days at 28°C (82°F). Malolactic fermentation in barrels.

 
Ageing

100% of the wine was aged for 12 months in French oak barrels and concrete eggs.

Tasting Notes

The cold climate and the calcareous soils make the
grapes ripen in a unique way, which results in a vibrant, mineral and complex wine. It is deep wine, full of aromas of wild black fruits and polished tannins in the mouth.

Gran Malbec

Cold maceration for 5 days before fermentation at 10ºC – 12ºC. Alcoholic fermentation at controlled temperatures with 2 to 3 punch downs per day.​
Ageing
Aged in French oak barrels for 16 months.​
Tasting Notes
A deep red wine with remarkable fruity and mineral aromas. The extreme growing conditions of the terroir give it richness, elegance and a lingering finish.​

Gran Corte

Tasting Notes
Intense red dark colour with ruby notes. This unique blend displays the wild freshness of the fruit from high elevation vineyards with hints of mineral and spiced notes. It is a wine with great complexity and a velvety finish.​

Pinot Noir

Harvest

Hand harvested in small trays of 20 kg in order not to damage the grapes. Double selection is performed: first selection of bunches and a second selection grape by grape.

Winemaking

Bunch selection. Fermented in open top small concrete tanks with 20% whole clusters and at a temperature ranging from 24 to 26°C (75 to 80°F).

Ageing

100% of the wine was aged for 12 months in French oak barrels and concrete eggs.

Tasting Notes

It stands out for its light ruby red colour and its aromas of cherries and mountain herbs. On the palate, it is elegant, with fine tannins and a delicate balance and a great length.

Chardonnay

Harvest
Harvest takes place between at the end of February and the first week of March. Hand harvested in small trays of 20 kg in order not to damage the grapes. Meticulous sorting is performed by hand prior to vinification in order to select the best grapes.

Fermentation
Skin maceration for 8 hours, followed by fermentation in stainless steel tanks at controlled temperatures of 14°C – 16°C.​
Tasting Notes
Yellow colour with green shiny tones. On the nose it is a fresh and complex with lovely aromas of white pears and citrus fruit. On the palate it is rich, crisp with a good structure and a long finish.​

Reserva Cabernet Sauvignon

Tasting Notes
Vibrant ruby red colour. Elegant aromas of ripe red fruits combined with hints of spices and mint. Round texture on the palate, ripe tannins and a long velvety finish.​

Torrontes Dulce Natural 4 Nevadas

Hand-harvested on July 1st after 4 snowfalls that created ideal conditions for sugar concentration in the grapes.

Winemaking

Whole clusters. Crushing and pneumatic pressing before cold decantation. Selected yeasts. 100% of the must fermented in French oak barrels.

Ageing

Aged French oak barrels for 12 months.

Tasting Notes

Bright golden yellow colour. Complex, fine and elegant on the nose, with aromas of citrus peel, honey and a subtle toast. On the palate it is unctuous, fruity with a great length.

Reserva Cabernet Franc

Captivating deep red colour with violet tones. Intense red and black fruit aromas combined with the complexity given by the ageing. On the palate is elegant with the perfect proportion of fruit, structure, roundness and lingering.
